Guishu blends are products which regularly present variations, particularly in the grape variety, but also sometimes in the production techniques. This new "Assemblage - Fusion" of Guishu is more cereal-minded than its predecessors. We are more focusing on brewing than winemaking this time. And this despite the fact that it only has 70% Gageron de Camargue rice when usually it has 80%. The blend is 30% white wine from the Chardonnay grape variety, which gives it a bolder character and a deep yellow color. This chardonnay comes from the Cognac region, it brings a touch of acidity to balance everything.
【Tasting Notes】
Color : Greenish yellow. Nose : Powerful, vinous, white flower, fruity like grapefruit and pear. Palate : Pleasant airy and fresh. A little citrus, with a beautiful persistence of the white floral. A fine and delicate body. Reminiscent of Provencal aperitifs. As dishes, we recommend : foie gras, smoked sausage, meats in sauce, blue cheeses, soft cheeses (camembert), crème brûlée.
